Finca El Progreso is located in Vereda El Caramelo, Palestina municipality outside of the city of Pitalito. The farm belongs to Rodrigo Sanchez Valencia and Claudia Samboni and is special because it is where the Sanchez Valencia family was born and raised! This expressive coffee entranced us with notes of caramel, apples, and bergamot tea.

Pour-Over Recipe
Using Stagg [X] Dripper
Ratio: 1:15
Coffee: 20g ground medium-fine (setting 2 on Ode Gen 1)
Water: 300g at 208°F
Bloom: 50g of water for 40 seconds
Pulse Pours: First pour to 150g, then to 200g, then to 250g, and finish at 300g with a swirl.
Total Brew Time: ~3:00-3:15
