About Ruby Coffee Roasters
There’s a reason people drive hundreds of miles to Nelsonville, Wisconsin (pop. 200) for a cup of coffee. The remote roaster was one of the first we shared on Fellow Drops and they continue to impress us with their thoughtful and excellent roasts.
8 oz of Colombia Jose Uribe Lasso.
Origin: Bruselas, Huila, Colombia
Process: 36 hours cold fermentation and twice washed
Elevation: 1750 MASL
Tasting Notes: Pear, mango, kumquat, cane sugar
8 oz of Guatemala Flor De Cafe.
Origin: Huehuetenango, Guatemala
Varietal: Bourbon, Caturra, Pache, Villa Sarchi
Process: Fully washed, dried on raised beds
Elevation: 1550-1800 MASL
Tasting Notes: Toffee, molasses, black cherry, dark chocolate
8 oz of Ethiopia Wate.
Origin: Guji, Uraga, Ethiopia
Varietal: Indigneous varieties
Process: 24-36 hours fermentation, dried on raised beds
Elevation: 2100 MASL
Tasting Notes: Lime zest, nectarine, lemon curd, candied ginger
Medium-fine grind.(Ode Setting: 1-2/3)
23g* in, 350g out.
*Try 23.5g for the Flor de Cafe to pull out those nuanced complexities!
Pour 1: Pour to 40g, swirl, 30s bloom
Pour 2: Pour to 150g, allow drawdown
Pour 3: Pour 100g to 250g, allow drawdown
Pour 4: Pour 100g to 350g
French Press Recipe
48g coffee and 700g/24oz water (fill to line in Clara).
Brew 4 minutes, plunge, and enjoy!
Ode Setting 5 2/3, 207F Water
Step 1. 48g in, Pour to 700g.
Step 2. Wait until 30-40s, then stir.
Step 3. Plunge at 4 minutes.
