Unity has worked with Colombian producer Rodrigo Palaez for 7 years, after falling in love with his outstanding natural process coffees. Rodrigo takes creative measures to dry coffees in the humid environment of Caldas, machine drying 12 hours on and 12 hours off to mimic the cycles of the sun, resulting in a strikingly unique profile. We tasted Pink Lady apples, strawberry, grape, and chamomile: a nuanced and sweet, tea-like delight.

Unity is a wholesale roaster and coffee subscription service based in Los Angeles. They roast at the Pulley Collective in Downtown LA, using both a 35 kilo Loring and a Probat UG22, and focus on cultivating long, meaningful relationships with a select few producers.
Using Stagg [X] Dripper
Coffee: 15 g ground at 2 on Ode Gen 2
Water: 250 g at 208°F
Bloom: 70 g for 45 seconds
Pulse Pours: After blooming, pour to 115 g, finishing at 1 mins. Wait 5 secs, then pour to 160 g. At 1:30 mins, pour to 205 g, and finally at 1:55 mins, pour to 205 g.
Total Brew Time: 2:35
Coffee: 19.5 g ground at 2 on Ode Gen 2
Water: 280 g at 200°F
Total Brew Time: 2:15
Steps: Pour 60 g of water, swirl or agitate with the plastic stirrer, and let bloom for 35 seconds. Next, pour to 280 g in a circular motion, then lightly swirl/agitate before putting the plunger in at an angle to seal. At 1:45, push down slowly for 30 seconds.
French Press Recipe
Coffee: 30 g ground at 3.66 on Ode Gen 2
Water: 420 g at 204°F
Total Brew Time: 4 minutes Steps: Pour 90 g of water over 15 seconds to bloom, gently stir, and let sit until 45 seconds. At 45 seconds, pour to 420 g of water and swirl gently for 10 seconds. At 4 minutes, plunge and serve.
Dose: 19 g
Yield: 35 g
Brew Time: 40 seconds
