Here's how we brewed this stunning honey process Colombia from Scott Rao’s Prodigal Coffee.

Scott Rao has spent 30 years as a coffee consultant and author, and his roastery Prodigal is reliably outstanding. This honey process lot comes from the Aponte community of indigenous Incan descendants in Nariño, Colombia. We tasted blackberry, cherry, grape, and honeycrisp apple.

Brew Guide for Prodigal Aponte Honey

Pour Over

* Stagg X/ flat bottom drippers 

Ingredients:

  • Coffee: 23g

  • Water: 390g at 205°F

Grind Settings:

  • Ode + SSP Burrs: 4.2 - 5.2

  • Ode Gen 2 Burrs: 3.2 - 4.2

  • Ode Gen 1 Burrs: 2.2 - 3.2

  • Opus: 4 - 5 (inner ring at 0)

Steps:

  1. Grind coffee at medium setting

  2. Rinse filter with 205°F water

  3. Bloom: Pour to 60g water, wait 35 seconds

  4. Continuous pour stages:

    • Pour to 190g, swirl when water is 0.5 inches above grounds

    • Pour to 290g

    • Pour to a final weight of 390g, swirl

  5. Target brew time: 4 - 5 minutes


Espresso

Recipe:

  • Coffee: 18g

  • Yield: 36g

  • Temperature: 200°F

  • Ratio: 1:2

  • Pressure: 9 bars

  • Pull time: 30 - 35 seconds

Note: Use the dose for which your basket is rated (eg 18 grams in an 18-g basket), and start with a 1:2 brewing ratio. If you are a very experienced barista or use the BH AutoComb, you may enjoy longer ratios, such as 2.5:1 or 3:1. Experiment! For very light roasts, try higher flow rates, such as pulling up to a 5:1 ratio in 30 seconds. No matter the shot size or use, we recommend avoiding shot times of more than 35 seconds. Espresso is finicky, and the range of grind qualities, pressure/flow paradigms and other factors is wide.
