Here's how we brewed this stunning decaf washed Colombia, grown high in Huila and roasted by Oakland’s Flower Child.
This coffee is named for Nevado del Huila, Colombia’s highest volcano. It was decaffeinated using ethyl acetate, a naturally occurring fruit compound that works particularly well to preserve flavor. We tasted tamarind, almond, and cacao.

Steps:

Grind coffee at medium-fine setting

Rinse filter with 212°F water

Bloom: Pour to 60g water, wait 45seconds

Continuous pour stages:

Pour to 160g, swirl when water is 0.5” above grounds

Pour to 260g, swirl

Final pour to 360g, swirl

Target brew time: 4 - 5 minutes
