Here's how we brewed this gorgeous Pink Bourbon from George Howell, one of specialty coffee’s biggest pioneers.

Since the 1970s, George Howell has been raising the standards of U.S. specialty coffee. He co-founded the Cup of Excellence, a prestigious global coffee competition, and his Boston roastery sources exceptional coffees. This Pink Bourbon is part of the Picker’s Project, which ensures fair wages and benefits for coffee pickers, and it’s a true treat. Expect a tropical punch of pineapple, cherry-like acidity, white honey sweetness, and floral aromatics.

Pour Over 

* Stagg X/ flat bottom drippers 

Ingredients: 

● Coffee: 26g 

● Water: 390g at 205°F 

Grind Settings: 

● Ode + SSP Burrs: 5.1 - 6.1

● Ode Gen 2 Burrs: 4.1 - 5.1

● Ode Gen 1 Burrs: 3.1 - 4.1

● Opus: 6 - 7 (inner ring at 0) 

Steps: 

1. Grind coffee at medium setting 

2. Rinse filter with 205 water, discard 

3. Bloom: Pour to 65g water in 15 seconds, wait to the 30 second mark

4. Continuous pour stages: 

○ Pour to 130g in 15 seconds, wait 15 seconds 

○ Pour to 195g in 15 seconds, wait 15 seconds 

○ Pour to 260g in 15 seconds, wait 15 seconds 

○ Pour to 325g in 15 seconds, wait 15 seconds 

○ Final pour to 390g in 15 seconds 

5. Target brew time: 3:30 - 4:00 minutes 

Espresso 

Recipe: 

● Coffee: 18g 

● Yield: 38g 

● Temperature: 205°F

● Ratio: 1:2.1 

● Pressure: 6 - 9 bars 

● Pull time: 29 - 31 seconds
