We cast a wide net, trying hundreds of coffees, keeping an open mind to new regions, processes, and roasters, and going through many rounds of cupping. Leg Lamp
Pour Over
Stagg X/ flat bottom drippers
Ingredients:
- Coffee: 22g
- Water: 350g at 203°F
Grind Settings:
- Ode + SSP Burrs: 4 - 5
- Ode Gen 2 Burrs: 3 - 4
- Ode Gen 1 Burrs: 2 - 3
- Opus: 5 - 6 (inner ring at 0)
Steps:
1. Grind coffee at medium-coarse setting
2. Rinse filter with 203°F water
3. Bloom: Pour to 44g water, wait 40 seconds
4. Continuous pour stages:
- Pour to 150g
- Pour to 250g, swirl when water is 0.5 in above grounds
- Final pour to 350g when water drains halfway
5. Target brew time: 3:15-4:15 minutes
Espresso
Recipe:
- Coffee: 18g
- Yield: 30g
- Temperature: 200°F
- Ratio: 1:2 (can go up to 1:3!)
- Pressure: 9 bars
- Pull time: 20-25 seconds
Note: Start on the coarser end of the grind spectrum for Opus. Expect sweet, earthy, syrupy, and intense chocolatey flavors. Stir before tasting.
