Fellow's Take on Merit Coffee Sugarcane Decaf | Brew Recipe

Here's how we brewed this sweet and flavorful Colombia decaf, roasted in Texas by Merit Coffee.

This Colombian coffee went through the sugarcane process, where naturally occurring ethyl acetate (EA) gently removes caffeine while magnifying sweetness and distinct berry notes. We tasted strawberry, vanilla bean, and clove.

Brew Guide for Merit Coffee Sugarcane Decaf

Pour Over

* Stagg X/ flat bottom drippers

Ingredients:

  • Coffee: 15g

  • Water: 250g at 205°F 

Grind Settings:

  • Ode + SSP Burrs: 6.2 - 7.2

  • Ode Gen 2 Burrs: 5.2 - 6.2

  • Ode Gen 1 Burrs: 4.2 - 5.2

  • Opus: 6.2 - 7.2 (inner ring at 0)

Steps:

  1. Grind coffee at medium to medium-coarse setting

  2. Rinse filter with 205F water. 

  3. Bloom: Pour to 45g water, stir, wait 45 seconds

  4. Continuous pour stages:

    • Pour to 90g, wait 30 sec

    • Slowly pour until the final weight of 250g, swirl

  5. Target brew time: 2:30-3:00 minutes


Espresso

Recipe:

  • Coffee: 18g

  • Yield: 45g

  • Temperature: 200°F

  • Ratio: 1:2.5

  • Pressure: 8 bars

  • Pull time: 28 seconds

Grind Settings:

  • Ode + SSP: 8.2 - 10

  • Ode Gen 2: 7.2 - 9

  • Opus: 8.2 - 10.2 (Use finer settings for 450-750ml, coarser for larger volumes)
