This Colombian coffee went through the sugarcane process, where naturally occurring ethyl acetate (EA) gently removes caffeine while magnifying sweetness and distinct berry notes. We tasted strawberry, vanilla bean, and clove.

Grind Settings:

Steps:

Grind coffee at medium to medium-coarse setting

Rinse filter with 205F water.

Bloom: Pour to 45g water, stir, wait 45 seconds

Continuous pour stages:

Pour to 90g, wait 30 sec

Slowly pour until the final weight of 250g, swirl

Target brew time: 2:30-3:00 minutes
