Here's how we brewed this special festive feature by the world-famous Amsterdam roaster DAK.
DAK is known for their unique experimental coffees and every year they choose a playful yet refined offering for the festive season. This year’s is a Colombian coffee co-fermented with orange, cardamom, and a touch of cinnamon, then honey processed. The result is comforting and a little unexpected, with sweet notes of soaked orange cake, cardamom and pearl sugar.

Pour Over
Stagg X/ flat bottom drippers
Ingredients:

Coffee: 20.5g

Water: 350g at 204°F
Grind Settings:

Ode + SSP Burrs: 5.1 - 6.2

Ode Gen 2 Burrs: 4.1 - 3.1

Ode Gen 1 Burrs: 3.1 - 2.1

Opus: 6.1-6.2 (inner ring at 0)
Steps:

Grind coffee at medium to medium-coarse setting

Rinse filter with 204°F water

Bloom: Pour to 50g water, wait 45 seconds

Continuous pour stages:

Pour to 150g, swirl gently when water is 0.5” above grounds

Pour to 250g
-
Final pour to 350, swirl

Target brew time: 2:20 - 3:20 minutes
Note: If following a declining temperature profile, it's helpful to remove your kettle lid and adjust the temperature down right after each pour (sometimes adding room temperature water helps cool it down faster).
