Here's how we brewed this beautiful example of how far decaf has come, roasted in Nashville by The Well.
This lot from Colombia went through a natural decaffeination process. Sugarcane molasses was fermented to produce EA (ethyl acetate), which is commonly found in wine and fruit, and this gently dissolved the caffeine while preserving the coffeeâs flavor. We tasted cola, honey, and citrus.

Brew Recipe for The Well EA Sugarcane Decaf Colombia
Using Stagg X Dripper
Ingredients:
20g of EA Sugarcane Decaf Colombia
320g of water
200°F
Steps
1. Measure and grind coffee at a medium-coarse setting
Measure out 25g of coffee beans and grind them on a medium-coarse setting. We used setting 6 on Ode with SSP Burr / 5 on Ode with Gen 2 Burrs, which is about 4 on Ode with Gen 1 Burrs. Suggested setting on Opus is between 7.1 and 8.1 - and note that the inner ring was set to 0 at 7.1 for us!
2. Heat water and rinse the filter
Heat water to 200°F and rinse your filter before putting your coffee grounds in.
3. Pour 50g water for the bloomÂ
Fully saturate your coffee grounds with 50g of water, and allow 30 seconds for the bloom. Give 5 gentle swirls during bloom phase.
4. Continue pouring in four stages
After the bloom, pour to 120g; then when the water is approximately 0.5 in above the bed of grounds, pour to 220g; once water drains halfway, pour to 320g. The total brew time varies, but weâre aiming for around 3:00 minutes.
5. Decant into your favorite mug and enjoy!
Look out for the incredible flavors of gingersnap cookies, peach yogurt, and cranberry jam.
Espresso
Ingredients:
18g of the same coffee
36g of water at 200°F
1:2 ratio
1Around 25 second pull time
Steps
1. Measure and grind coffee
Measure out 18g of coffee beans.
2. Make sure your espresso machine is at temp.
Water should ideally be at 200°F.
4. Grind your coffee
We suggest a brew time of 25 seconds.
4. Pull shot at 9 bars!
Pull your shot at 9 bars with around a 25 second pull time.
5. Decant into your favorite demitasse cup and enjoy!

Steps
1. Measure and grind coffee
Measure out the weight of beans (dry dose) that Aiden recommends once you enter in the amount of water volume you want out. For single serve at 150ml out, grind around 5 on Ode + SSP, 4 Ode Gen 2 - a medium grind setting. Grind setting will need to be incrementally coarser as the amount of coffee increases.
For batch, weâd recommend grinding around 5.2 on Ode + SSP, which is 4.2 on Ode Gen 2 - a medium setting. Grind setting will need to be incrementally finer if using less coffee.
2. Make sure your Aiden is programmed to the parameters above.
You can enter in your own custom Brew Profile in the âEdit Profilesâ menu! You can edit single serve and batch settings under âadvancedâ at the bottom of the profile editor screen.
4. Rinse your filter
We suggest rinsing your paper filter in the Aiden basket prior to brewing (and if you rinse when the basket is in your Aiden machine, be sure to dump out the excess water from the carafe!)
4. Start your brew!
Once you have your Brew Profile setup in the âEdit Profilesâ menu, go back to the main menu, and into âGuided Brewâ. You should see your custom Brew Profile if you scroll down!
5. Wait for the chime, swirl, and pour!
Aiden will chime when the coffee is ready to go! Simply swirl your carafe to get all of the good stuff in the coffee mixed evenly, and pour!
