The experience
This coffee is begging to be bottled up and classified as a natural wine. It went through two stages of fermentation, carbonic maceration and anaerobic, with an inoculated champagne yeast. In the cup, you'll find notes of grape, sweet melon, and a sparkling acidity: like a '99 Jacque Selosse blanc de blanc that's been sitting in the cellar for ages.
About Mom 'n 'em Coffee

Mom 'n 'em opened on Mother's Day 2019 in the Camp Washington neighborhood of Cincinnati, Ohio. Tony and Austin Ferrari opened their original cafe to give their mother a new lease on life. Since early 2023, they have been sourcing and roasting to provide bright, vibrant coffees to their community.

Single Serve:

Grind Guidance: Ode + SSP: 2.2 - 4.2, Ode Gen 2: 1.2 - 3.2, Opus: 3 - 5

For smaller single-serve sizes e.g. (150 - 250 ml), stay on the finer side of the grind setting range. For larger single serve sizes grind toward the coarser end of the grind setting range.

Batch:

Grind Guidance: Ode + SSP: 5 - 8, Ode Gen 2: 4 - 7, Opus: 5 - 8

For smaller batch sizes e.g. (450 - 750 ml), stay on the finer side of the grind setting range. For larger batch sizes grind toward the coarser end of the grind setting range.

Pour-Over Recipe Note: Let these beans rest for about 10 days before brewing. Ratio: 1:17 Coffee: 20 g Water: 340 g Bloom: 50 g for 50 seconds Steps: Follow up the bloom with a second pour of 90 g, then two other pours of 100 g. Total Brew Time: ~3:15 - 3:30 mins
