Using Stagg X Dripper for a 400g Dose
Ingredients:
25g of coffee from any Onyx Advent Calendar selection
400g of water
200°F
Steps
1. Measure and grind coffee at a medium-fine setting
Measure out 16g of coffee beans and grind them on a medium-fine setting. We used setting 5 on Ode with SSP Burr / 4 on Ode with Gen 2 Burrs, which is about 3 on Ode with Gen 1 Burrs. We suggest around a 7 on Opus.
2. Heat water and rinse the filter
Heat water to 200°F and rinse your filter before putting your coffee grounds in.
3. Pour 50g of water for the bloom
Fully saturate your coffee grounds with 50g of water, and allow around 30 seconds for the bloom.
4. Continue pouring in a few stages
After the bloom, pour in a spiral to 160g; when water drains about halfway, pour in the center to 220g in the center; when water drains halfway, pour in the center to 280g; when water drains halfway, pour in a spiral to 340g; then finish by pouring in a spiral up to 400g. The total brew time varies, but we’re aiming for 3:30-4:30 minutes. Denser coffees will have a longer total brew time however!
5. Decant into your favorite mug and enjoy!

Using Stagg X Dripper for a 250g Dose
Ingredients:
16g of coffee from any Onyx Advent Calendar selection
250g of water
200°F
Steps
1. Measure and grind coffee at a medium-fine setting
Measure out 16g of coffee beans and grind them on a medium-fine setting. We used setting 4.1 on Ode with SSP Burr / 3.1 on Ode with Gen 2 Burrs, which is about 2.1 on Ode with Gen 1 Burrs. We suggest around a 6 on Opus.
2. Heat water and rinse the filter
Heat water to 200°F and rinse your filter before putting your coffee grounds in.
3. Pour 30g of water for the bloom
Fully saturate your coffee grounds with 30g of water, and allow around 30 seconds for the bloom.
4. Continue pouring in 3 stages
After the bloom, pour in the center to 100g; when water drains about halfway, pour to 200g in the center; then finish by pouring in a spiral up to 250g. The total brew time varies, but we’re aiming for 2:30-3:30 minutes. Denser coffees will have a longer total brew time however!
5. Decant into your favorite mug and enjoy!
