Here's how we brewed this distinctly sweet organic coffee, grown at super-high elevations and roasted in Wisconsin by Wonderstate.
Wonderstate is a 100% solar-powered roaster in a rural Wisconsin farming town. They sourced this lot from one of the world’s highest coffee growing elevations of up to 2,400 MASL in Cusco, Peru. At this altitude the cherries ripen more slowly, developing greater density and sweetness in flavor. We tasted maple syrup, candied almonds, and Meyer lemon.

Steps:

Grind coffee at medium-fine setting

Rinse filter with 205°F water

Bloom: Pour to 60g water, wait 35 seconds

Continuous pour stages:

At 35 seconds: Pour to150g,

At 1:10: Pour to 250g

At 1:45: Pour to 330g, give the coffee a gentle swirl when water is approximately 3 inches above grounds

Target brew time: 2:45 - 3:30 minutes depending on water hardness and desired TDS
