Based in Rotterdam, A.M.O.C. (A Matter of Concrete) has gained worldwide renown for their high standards and exceptional coffee quality. This Colombian selection was processed with yeast inoculation, plus hot and cold water washes to modulate fermentation, all without any trace of funk or boozy character. It’s a silky, complex cup of passionfruit and bubblegum.

Water: 250g at 199°F for bloom, 190°F for subsequent pours
Grind Settings:

Steps:

Grind coffee at medium setting

Rinse filter with 199 °F water

Bloom: Pour to 40g water, wait 30 seconds

Continuous pour stages:

Pour to 110g, swirl when water is 0.5” above grounds

Pour to 180g

Final pour to 250g, swirl

Target brew time: 2:00 - 2:30 minutes
