Here's how we brewed this sweet and nuanced natural process from a stellar producer, roasted in Washington by Boon Boona Coffee.
Boon Boona exclusively sources coffees from Africa and offers traditional coffee ceremonies inspired by their founder’s Eritrean family. This natural process lot was produced by Mulugeta Muntasha, who’s placed many times in Ethiopia’s Cup of Excellence. It’s super sweet with nuanced fruit notes and a caramel finish. We tasted guava, honeydew, berry compote, and caramel.

Stagg X Pour Over
Ingredients:
- Coffee: 22g
- Water: 352g at 190°F
Grind Settings:
- Ode + SSP Burrs: 3 - 4
- Ode Gen 2 Burrs: 2 - 3
- Ode Gen 1 Burrs: 1 - 2
- Opus: 3.2 - 4.2
Steps:
- Grind coffee at medium-fine setting
- Rinse filter with 190°F water
- Bloom: Pour 60g water, wait 45 seconds
- Continuous pour stages:
- Pour to 200g, swirl when water is 0.5 in (~1 cm) above grounds
- Pour to 250g
- Final pour to 352g
- Target brew time: 4:15 - 4:30 minutes
Tasting Notes: Guava, berry compote, caramel
Espresso
Recipe:
- Coffee: 19g
- Yield: 38g
- Temperature: 200°F
- Ratio: 1:2
- Pressure: 8 second preinfusion, then 9 bars; ramp down in the last 4-5 seconds of the shot
- Pull time: 25-27 seconds
Note: During the 8 second preinfusion / 4 - 5 second ramp down, you should be at 3 - 4 bars
