This coffee comes from a unique project in Colombia that helps young coffee producers overcome the barriers to entry to the industry. It features both natural and experimental process coffees and the result is a funky, fruit-forward cup. We tasted pomegranate, cherry cordial, and rich chocolate.

Pour Over
* Stagg X/ flat bottom drippers
Ingredients:
● Coffee: 22g
● Water: 350g at 199°F
Grind Settings:
● Ode + SSP Burrs: 6 - 7
● Ode Gen 2 Burrs: 5 - 6
● Ode Gen 1 Burrs: 3 - 4
● Opus: 7 - 8 (inner ring at 0)
Steps:
1. Grind coffee at medium setting
2. Rinse filter with 198°F water
3. Bloom: Pour to 40g water, wait 40 seconds
4. Continuous pour stages:
○ Pour to 175g, swirl when water is 1 inch above grounds
○ Pour to 250g
○ Pour to 300g
○ Final pour to 350g, swirl
5. Target brew time: 2:30 - 3:00 minutes
Espresso
Recipe:
● Coffee: 18.5g
● Yield: 40g
● Temperature: 197°F
● Ratio: 1:2.16
● Pressure: 3 bar pre infusion, then 9 bars
● Pull time: 7 second pre infusion, 35 total time

○ 7 offered more tropical fruit, white grape, peach
○ 6.1 gave us more natural fermentation notes, red fruit, deeper qualities
● Opus: 5 - 6.1 (Use finer settings for 150-250ml, coarser for larger volumes)
