stunning decaf from Ethiopia, roasted by Michigan’s Madcap Coffee.
Our tasting panel couldn’t believe this coffee was a decaf because of its incredible clarity of flavor. While most Ethiopian coffee is grown by smallholder farmers, this lot comes from an individual estate owned by Abdo Aba Mecha and his meticulous care is clear in the cup. We tasted milk chocolate, dark berries, and white peach.

Brew Guide for Madcap Coffee Abdo Aba Mecha EA Decaf
Pour Over
* Stagg X/ flat bottom drippers
Ingredients:
● Coffee: 23g
● Water: 355g at 208°F
Grind Settings:
● Ode + SSP Burrs: 5.2-6.2
● Ode Gen 2 Burrs: 4.2-5.2
● Ode Gen 1 Burrs: 3.2-4.2
● Opus: 6-7 (inner ring at 0)
Steps:
1. Grind coffee at medium setting
2. Rinse filter with 208°F water
3. Bloom: Pour to 55g water, wait 30 seconds
4. Continuous pour stages:
○ Pour to 155g, swirl when water is 1cm above grounds
○ Pour to 255g
○ Final pour to 355g, swirl
5. Target brew time: 3:45-4:15 minutes

● Pull time: 27-29 seconds
