A beautiful washed Colombia bursting with sweet citrus and floral notes, roasted by coffee legends Counter Culture.

We admire how Counter Culture has never compromised on quality over the years. Yudi (the resident Q Grader at our LA store) used their coffees in a brewer’s competition because “they’re one of the most consistent in the game.” The proof’s in this succulent washed Colombia. We tasted florals, tropical fruit, sweet citrus, and a soft, juicy mouthfeel.

Brew Guide for Counter Culture Coffee Cueva de los Llanos

Pour Over

* Stagg X/ flat bottom drippers 

Ingredients:

  • Coffee: 20g

  • Water:  350g at 205°F

Grind Settings:

  • Ode + SSP Burrs: 6 - 7

  • Ode Gen 2 Burrs: 5- 6

  • Ode Gen 1 Burrs: 4 - 5

  • Opus: 7 - 8 (inner ring at 0)

Steps:

  1. Grind coffee at medium setting.

  2. Rinse filter with 205°F water

  3. Bloom: Pour to 50g water, wait 30 seconds

  4. Pulse pour method slow deliberate pours:

    • Pour to 150g, and wait until the brew bed is almost dry—but not completely, then

    • Pour to 250g, and again wait until the brew bed is almost dry before proceeding. 

    • Final Pour to 350g

  5. Target brew time: 2:15 - 2:45  Adjust based on taste. For more sweetness, aim for a longer brew time closer to 2:45 with a finer grind. For more acidity, go for a shorter brew time closer to 2:15 with a coarser grind. The goal is balance! :)


Espresso

Recipe:

  • Coffee: 18g

  • Yield: 36.0g

  • Temperature: 201°F

  • Ratio: 1:2

  • Pressure: 9 bars

  • Pull time: 29-31 seconds

Note: 5 - 7 days off roast is the best amount of rest time for peak flavor!
