Corvus Coffee's main espresso blend, featuring a Guatemalan base from Huehuetenango paired with Ethiopian coffees for complexity.

Dead Reckoning is part of Corvus's core cafe offerings, blending a chocolatey Guatemalan coffee from the Huehuetenango region with Ethiopian natural and washed coffees for structured acidity and fruit-forward sweetness. The result is an approachable espresso which appeals to coffee connoisseurs and everyday drinkers alike. We tasted berry, chocolate, and sweet lemon.

Pour Over

Stagg X/ flat bottom drippers

Ingredients:

  • Coffee: 21g

  • Water: 340g at [Temperature]°F

Grind Settings:

  • Ode + SSP Burrs: 4.1 - 5.1

  • Ode Gen 2 Burrs: 3.1 - 4.1

  • Ode Gen 1 Burrs: 2.1 - 3.1

  • Opus: 5 - 6 (inner ring at 0)

Steps:

  1. Grind coffee at medium to medium-coarse setting

  2. Rinse filter with hot water

  3. Bloom: Pour 40g water, wait 30 seconds

  4. Continue with pulsated pours to 340g total

  5. Target brew time: 3:30 - 4:30 minutes

Ratio: 1:16

Note: We recommend a pulsated pour for this coffee.

Espresso

Recipe:

  • Coffee: 18g

  • Yield: 42-45g

  • Temperature: [Temperature]°F

  • Ratio: 1:2.3-2.5

  • Pressure: [Pressure] bars

  • Pull time: 26-29 seconds

Note: A smaller yield will lead to more fruit flavors and a larger yield will lead to more chocolate flavors.
