Fellow's Take on Dinastía Gesha by Prodigal | Brew Recipe

Here's how we brewed this rare chance to try the champagne of coffees from a world-class producer, roasted by Prodigal Coffee.

Founded by acclaimed coffee consultant Scott Rao, Prodigal is super selective in their sourcing. Gesha is one of the most coveted strains of coffee and this lot comes from producer Wilder Lazo: a former veterinarian known for his scientific approach to processing. It’s bursting with gorgeous florals, along with zippy pineapple, jammy strawberry, and crisp citrus.

Brew Guide for Prodigal Wilder Lazo Dinastia Gesha

Let it rest! This coffee should peak at 3 - 4 weeks off of roast.

Pour Over

* Stagg X/ flat bottom drippers 

Ingredients:

  • Coffee: 22g

  • Water: 360-375g at ~210°F

Grind Settings:

  • Ode + SSP Burrs: 4.1-4.2

  • Ode Gen 2 Burrs: 3.1-3.2

  • Ode Gen 1 Burrs:  2.1-2.2

  • Opus: 4.1-5 (inner ring at 0)

Steps:

  1. Bring water to a boil and insert filter into your dripper

  2. Wet the Stagg X and filter with near-boiling water

  3. Flatten the wet filter against the wall of the brewer as much as possible

  4. Set Stagg X on scale. Tare scale.

  5. Put 22g ground coffee in Stagg X, then shake it side to side to level the grounds and tare scale.

  6. Pour 65-70g of 204-206°F water over the grounds, being careful to spread the water evenly throughout the coffee bed. Let bloom for 45 seconds.

  7. Give Stagg X a gentle swirl 

  8. When water level is about 1cm above grounds, resume pouring.

  9. Give Stagg X a gentle swirl

  10. Repeat process until total water weight = 360 - 375g

  11. Give Stagg X a gentle swirl immediately after last pour

Espresso

Recipe:

  • Coffee: 18g

  • Yield: 36g

  • Temperature: 200°F

  • Ratio: 1:2

  • Pressure: Pressure at 3 bars for 20 seconds, then 9 bars

  • Pull time: 35 - 45 seconds total with preinfusion

  • Opus: 5.2 - 9.2 (Use finer settings for 450-750ml, coarser for larger volumes)
