Fellow's Take on Flying Jewel by Utopian | Brew Recipe

Here's how we brewed this delightful daily drinker by Utopian Coffee.

Flying Jewel is the nickname for a hummingbird in the remote coffee-growing areas of Peru: a vital part of the ecological system. This blend combines coffee from Peru with Ethiopian and Sumatran lots to create a harmonious fusion of robust flavors. We tasted dark chocolate, red berries, and sweet cream.

NOTE: Flying Jewel is at its peak 1-6 weeks off roast.

Pour Over 

* Stagg X/ flat bottom drippers 

Ingredients: 

● Coffee:23g 

● Water: 350g at 208°F 

Grind Settings: 

● Ode + SSP Burrs: 4.1 - 5.1

● Ode Gen 2 Burrs: 3.1 - 4.1

● Ode Gen 1 Burrs: 2.1 - 3.1

● Opus: 5- 6 (inner ring at 0) 

Steps 

1. Grind coffee at a medium to medium-coarse setting 

2. Rinse filter with hot water (208°F), then discard rinse water 

3. Add ground coffee to filter, gently level, and tare the scale 

Bloom 

Pour to: 50 g 

Bloom time: 45 seconds 

● Pour slowly in a spiral starting in the center and moving outward ● Swirl the brewer vigorously 3–4 times to fully saturate grounds

Continuous Pour Stages 

Pour to: 150 g, swirl when water sits just above the grounds 

Pour to: 250 g 

Final pour to: 350 g, swirl 

4. Remove the brewer once target weight is reached and drawdown completes 

Target Brew Time 

3:30–4:00 minutes (total bloom + brew) 

Serve 

Stir the final cup, enjoy, discard grounds and filter, and rinse equipment.
Espresso 

Recipe: 

● Coffee: 20g 

● Yield: 50g 

● Temperature: 200°F 

● Ratio: 1:2.5 

● Pressure: 8 bars 

● Pull time: 30-40 seconds 

Note: Start on the coarser side of your usual grind setting and move finer until desired taste is achieved.

Ode Gen 2: 3.1 - 4.1

Opus: 5.3 - 6.3

(Use finer settings for 150–250 ml, coarser for larger single-serve volumes) 

Batch Brew 

(Scaled using the same extraction logic as the Single Serve profile) Grind Settings: 

Ode + SSP: 5.1 - 9

Ode Gen 2: 4.1 - 8

Opus: 6.3 - 9.3

(Use finer settings for 450–550 ml, coarser for 650–750 ml)
