The Cuevitas farm is run by third-generation producer and trained agronomist Renardo Ovalle, who is dedicated to cultivating a wider range of coffee varieties. The flavor profile of this anaerobic process lot differs from what you’d expect from Guatemala. We tasted juicy guava, milk chocolate, a rich body, and a finishing touch of nougat.

Brew Guide for Guatemala Cuevitas Anaerobic
Stagg X Pour Over
Ingredients:
- Coffee: 20g
- Water: 315g at 205°F
Grind Settings:
- Ode + SSP Burrs: 4-5
- Ode Gen 2 Burrs: 3-4
- Ode Gen 1 Burrs: 2-2.1
- Opus: 5-6 (inner ring at 0)
Steps:
- Grind coffee at medium setting
- Rinse filter with 205°F water
- Bloom: Pour 50g water, wait 45 seconds
- Continuous pour stages:
- Pour to 160g, swirl when water is 0.5" above grounds
- Pour to 220g
- Pour to 280g
- Final pour to 315g, swirl
- Target brew time: 3:00-4:00 minutes
Tasting Notes: Juicy guava, milk chocolate, rich body, nougat finish
Espresso
Recipe:
- Coffee: 18.5g
- Yield: 42g
- Temperature: 200.5°F
- Ratio: 1:2.5
- Pressure: 9 bars
- Pull time: 28-30 seconds
