Here's how we brewed this beautifully floral washed Guatemala, roasted in London by Square Mile Coffee Roasters.
Square Mile was co-founded by James Hoffmann who you may know from his fantastic coffee education videos, and their sourcing is world class. This coffee brings back aspects of Guatemala terroir we haven’t seen in recent years: a distinct florality that really points to the quality of the green coffee. We tasted black cherry, nectarine, English breakfast tea, and florals.

Pour Over
* Stagg X/ flat bottom drippers
Ingredients:
● Coffee: 15g
● Water: 250g at 208°F
Grind Settings:
● Ode + SSP Burrs: 6.1 - 7
● Ode Gen 2 Burrs: 5.1 - 6
● Ode Gen 1 Burrs: 4.1 - 5
● Opus: 6.1 - 7
Steps:
1. Grind coffee at medium setting
2. Rinse filter with 208°F water
3. Bloom: Pour to 60g water, wait 45 seconds
4. Continuous pour stages:
○ Pour with five even pours until reaching 250g final weight 5. Target brew time: 3:00 - 3:30 minutes
Espresso
Recipe:
● Coffee: 19g
● Yield: 46 - 50g
● Temperature: 200°F
● Ratio: 1 : 2.4
● Pressure: 9 bars
● Pull time: 29 - 33 seconds
Note: These are just guidelines to use as a starting point. We recommend a slightly higher yield to our standard espresso recipe. We recommend resting this coffee for 2+ weeks if brewing as an espresso, to allow the profile to fully develop.
