Nahun Fernandez specializes in Paraneima, a hybrid variety with vibrant fruit and floral notes, and his natural process placed third in Honduras’s 2025 Cup of Excellence. We tasted a juicy, tropical cup of pink guava, red wine, and parfait.

Steps:

Grind coffee at a medium to medium coarse setting

Rinse filter with 200°F water

Bloom: Pour to 60g water, swirl, wait 45 seconds

Continuous pour stages:

Pour to 130g, wait 30-40 sec

Pour to 200g, wait 30-40 sec

Pour to 270g, wait 30-40 sec

Final pour to 340g, swirl
