With high elevations and volcanic soils, Panama grows some of the world’s finest coffees and this selection by Bean & Bean is a stunner. Produced by the Garrido Estate, winners of Best of Panama (the country’s most prestigious coffee competition), this washed Catuai is beautifully expressive.

Steps:

Grind coffee at medium-coarse setting

Rinse filter with 205°F water

Bloom: Pour to 50g water, wait 23 seconds

Continuous pour stages:

Pour to 100g, wait 15 seconds

Final Pour to 178g, swirl
Bypass, or add water to brewed concentration after you are finished brewing. Remove the dripper and add 100g of water to your brew at 196°F
