As featured in our best selling Back-to-School Box, a nutty and jammy blend created by Brandywine and Black & White.

This blend is designed to evoke that grade school lunch staple: a PB&J sandwich. It consists of a deeply fruited and nutty natural process coffee from Brazil, a sweet natural from Uganda, a more mellow washed coffee from Nariño, Colombia, and a grape co-ferment from Quindío, Colombia, for all that jammy goodness.

PB&J

Pour Over

* Stagg X/ flat bottom drippers 

Ingredients:

  • Coffee: 20g

  • Water: 300g at 200°F

Grind Settings:

  • Ode + SSP Burrs: 4 - 5.1

  • Ode Gen 2 Burrs: 3 - 4.1

  • Ode Gen 1 Burrs: 2 - 3.1

  • Opus: 4 - 5.1 (inner ring at 0)

Steps:

  1. Grind coffee at medium to medium-fine setting

  2. Rinse filter with 200°F water

  3. Bloom: Pour to 60g water, wait 35 seconds

  4. Continuous pour stages:

    • Pour to 150g

    • Pour to 250g, swirl 5 - 10x once water is about 0.5 - 1 inch above the bed of grounds

    • Final pour to 300g

  5. Target brew time: 3:30 - 4:15 minutes


Espresso

Recipe:

  • Coffee: 18g

  • Yield: 36g

  • Temperature: 200°F

  • Ratio: 1:2

  • Pressure: 9 bars, preinfuse 10s at 3 bars

  • Pull time: 28 - 32 seconds
