Here's how we brewed this exclusive blend created just for Fellow by Portland’s Proud Mary Coffee.
This blend consists of three unique coffees from three unique terroirs: a lush fruit-forward Ethiopia natural, a beautifully balanced washed Bourbon from a legacy Salvadoran farm, and a high-grown washed Guatemala from a Cup of Excellence winning producer. The result is floral yet sweet, with notes of blackberry, raspberry, almond, and milk chocolate - superb across all brew methods!

Pour Over

Steps:

Grind coffee at medium to medium-fine setting

Rinse filter with 212°F water

Bloom: Pour to 80g water, Agitate back and forward side to side then wait 45 seconds

Second Pour: At 45 seconds pour in a zig zag motion across the slurry until you reach a total brew weight of 320g. Swirl and let drain.

Target brew time: 3:30 - 4:20 minutes
