Here's how we brewed this sweet, rich dark roast by Oakland’s Timeless Coffee.

This blend is Timeless’s only dark roast and they make every drop count. It combines Colombian and Ethiopian coffees with sweet, rich, and full-bodied results. We tasted blackberry, lemon, cocoa, and brown sugar.

Brew Guide for Black Sails Dark Roast

Pour Over

* Stagg X/ flat bottom drippers 

Ingredients: 

● Coffee: 22.5g 

● Water: 340g at 200°F 

Grind Settings: 

● Ode + SSP Burrs: 6 - 6.2

● Ode Gen 2 Burrs: 5 - 5.2

● Ode Gen 1 Burrs: 4 - 4.2 

● Opus: 6.1 - 7 (inner ring at 0) 

Steps:

1. Grind coffee at medium-coarse setting 

2. Rinse filter with 200 water 

3. Bloom: Pour to 60g water, wait 40 seconds 

4. Continuous pour stages: Wait until grinds are just visible (10-15 seconds) between pours and swirl in concentric circles each pour. 

○ Pour to 160g 

○ Pour to 200g. 

○ Pour to 240g 

○ Pour to 280g 

○ Final pour to 340g 

5. Target brew time: 3:30 - 4 minutes 

Espresso

Recipe: 

● Coffee: 18 - 20g 

● Yield: 36 - 40g 

● Temperature: 205°F 

● Ratio: 1:2 

● Pressure: 9 bars 

● Pull time: 28 - 32 seconds
