Here's how we brewed this boxset of two festive blends that are fun for the whole family. For a light, bright cup, brew Good Tidings: a fruity blend of Colombian and Ethiopian coffees with notes of sugared violets, raspberry, peach ring candy, and creamy hazelnut. For a bold, intense cup, sip on Leg Lamp: a smooth blend of Burundian and Latin American coffees with notes of mulled wine, baker's chocolate, blood orange, and a delicious blast of fudge. Ideal for gifting, or to stock your brew bar for the holidays.

Using Stagg X Dripper for Leg Lamp
Ingredients:
22g of Leg Lamp
350g of water
203°F
Steps
1. Measure and grind coffee at a medium-coarse setting
Measure out 22g of coffee beans and grind them on a medium-coarse setting. We used setting 4 - 5 on Ode with SSP Burrs, which is about a 3 - 4 on Ode with Gen 2 Burrs, which is about 2 - 3 on Ode with Gen 1 Burrs. This would be around 5 - 6 on Opus with inner ring set to 0.
2. Heat water and rinse the filter
Heat water to 203°F and rinse your filter before putting your coffee grounds in.Â
3. Pour 44g of water for the bloomÂ
Fully saturate your coffee grounds with 44g of water, and allow about 40 seconds for the bloom.
4. Continue pouring in four stages
After the bloom, pour to 150g; then when the water is approximately 0.5 in above the bed of grounds, then pour to 250g; once water drains halfway, pour to 350g. The total brew time varies, but weâre aiming for between 3:15 - 4:15 minutes.
5. Decant into your favorite mug and enjoy!

Ingredients:
18g of the same coffee
30g of water at 200 F
1:2 ratio (can go up to 1:3!)
Steps
1. Measure and grind coffee
Measure out 18g of coffee beans.
2. Make sure your espresso machine is at temp.
Water should ideally be at 200°F.
4. Grind your coffee
We suggest around a 20-25 second pull time. Iâd start on the coarser end of the grind spectrum for espresso on Opusâ but remember, the times are more important than the accuracy of Opus settings, considering espresso times can vary wildly due to atmospheric conditions in your area.
4. Pull shot at 9 bars!
Pull your shot at around 9 bars with around 20-25 seconds pull time.
5. Decant into your favorite demitasse cup and enjoy!

4. Rinse your filter
We suggest rinsing your paper filter in the Aiden basket prior to brewing (and if you rinse when the basket is in your Aiden machine, be sure to dump out the excess water from the carafe!)

Mulled Au Lait with Amaretti Finish
Please note: This syrup contains alcohol, so is not suitable for everyone! Please drop us a line if youâd like to make this alcohol-free.
Ingredients:
283.5g (10oz) Leg Lamp Blend (brewed to specifications above)
20g (0.7oz) Mulled wine syrup
Steamed almond milk
Shaved Amaretti cookie + whole Amaretti cookie to finish
Steps
1. Brew coffee and weigh out mulled wine syrup in medium-sized vessel
Measure out 20g of mulled wine syrup in a medium-sized vessel. We used the Mighty Small Glass Carafe!
2. Steam your almond milk.
When coffee is 0:15s to finished brewing, steam your almond milk (or froth it for a cold foam top instead!)
4. Pour coffee into vessel with mulled wine syrup and stir vigorously
Youâll want to stir or swirl vigorously so that all syrup is incorporated into the coffee!
4. Scoop coffee bubbles and pour almond milk to top
Pour your coffee into your final mug, making sure to leave 1 - 2 inches of room at the top. Scoop the excess bubbles off of the surface of the coffee before pouring your almond milk to ensure a smooth surface layer.Â
5. Shave Amaretti cookies and finish with a whole Amaretti on top!

- 2 Large oranges
- 1 Lemon
- 1 Lime
- 13g Mulling spices (or to taste)
- 2 Bay Leaves
- 2 Teaspoons Vanilla Extract
- 270g Light Brown Sugar
- 4 Tablespoons Lingonberry Jam
- 185 ml Red Wine
