Unity has worked with Colombian producer Rodrigo Palaez for 7 years, after falling in love with his outstanding natural process coffees. Rodrigo takes creative measures to dry coffees in the humid environment of Caldas, machine drying 12 hours on and 12 hours off to mimic the cycles of the sun, resulting in a strikingly unique profile.
We tasted Pink Lady apples, strawberry, grape, and chamomile: a nuanced and sweet, tea-like delight.

Brew Recipe for Pour-Over
Using Stagg [X] Dripper
Ingredients:
18g of Laderas Del Tapias by Unity Coffee to make 300g of coffee.
300g Water
Steps
1. Measure and grind coffee
Measure out 18g of coffee beans and grind them on a medium to medium-coarse setting. We used setting 4.1 on Ode with Gen 2 Burrs, which is about 3.1 on Ode with Gen 1.
2. Heat water and rinse filter
Heat water to 205°F and rinse your filter before putting your coffee grounds in.
3. Pour 50g for the bloom
Fully saturate your coffee grounds with twice as much water as coffee, and allow about 35 seconds for the bloom.
4. Continue pouring in 2 stages
After the bloom, pour to 150g and finish at 100g. The total brew time should be about 3:00 mins.
5. Decant into your favorite mug and enjoy!
We found this coffee to be amazing with notes of Pink Lady apples, strawberry, grape, and chamomile: a nuanced and sweet, tea-like delight.
