A returning favorite from London’s Square Mile Coffee Roasters. Don’t miss this elegant and silky-smooth Ethiopia natural.

This lot was grown by smallholder farmers living in Shoondhisa, a small village in Ethiopia’s Guji region which is responsible for some of the country’s best natural process coffees. We tasted elegant and silky-smooth notes of mango, blueberry, and florals.

Brew Guide for Shoohndisa

Pour Over

* Stagg X/ flat bottom drippers 

Ingredients:

  • Coffee: 15g
  • Water: 250g at 208°F

Grind Settings:

  • Ode + SSP Burrs: 6.1 - 7
  • Ode Gen 2 Burrs: 5.1 - 6
  • Ode Gen 1 Burrs: 4.1 - 5
  • Opus: 7 - 7.2 (inner ring at 0)

Steps:

  1. Grind coffee at medium-coarse setting
  2. Rinse filter with 208°F water
  3. Bloom: Pour to 60g water, wait 45 seconds
  4. Continuous pour stages:
    • Pour with five even pours until reaching 250g final weight
  5. Target brew time: 3:00 - 3:30 minutes

Espresso

Recipe:

  • Coffee: 18g
  • Yield: 40g
  • Temperature: 200°F
  • Ratio: 1:2.2
  • Pressure: 6 bars
  • Pull time: 22 - 25 seconds
