Fellow's Take on Wimp Decaf Coltrane | Brew Recipe

Here's how we brewed this sweet washed Colombia by Wimp, a unique decaf-only roaster.

Based in Greenville, SC, Wimp is flipping the script on decaf coffee being for “wimps” with their vibrant offerings. Coltrane is one of their most-loved staples, decaffeinated with natural ethyl acetate to remove approximately 97% of caffeine while retaining the coffee’s flavor and complexity. We tasted maple syrup, tangerine, and stewed apples.

Brew Guide for Wimp Decaf Coltrane

Pour Over

* Stagg X/ flat bottom drippers 

Ingredients:

  • Coffee: 21g

  • Water: 336g at 203°F

Grind Settings:

  • Ode + SSP Burrs: 8 – 9.1

  • Ode Gen 2 Burrs: 5.1 – 7

  • Ode Gen 1 Burrs: 3.1 – 4

  • Opus: 4.3 - 5.3 (inner ring at 0)

Steps:

  1. Grind coffee at medium-coarse setting

  2. Rinse filter with 203°F water

  3. Bloom: Pour to 60g, wait 30s

  4. Continuous pours:

    • Pour to 150g, swirl when water is just above grounds

    • Pour to 250g

    • Pour to 336g

    • Final swirl

  5. Target brew time: 2:45–3:15 minutes


Espresso

Recipe:

  • Coffee: 18g

  • Yield: 40g

  • Temperature: 200°F

  • Ratio: 1:2.2

  • Pressure: 9 bars

  • Pull time: 27–32s

Note: Tends to channel if too fine. Decaf is less forgiving, so start slightly coarser and dial in gently.
