The experience

Southern Weather was Onyx’s first ever blend and it’s been a foundational offering ever since: comforting, approachable, and versatile with or without milk. The blend’s composition changes with the seasons to hit Onyx’s flavor profile, presently combining sweet caramelized notes from a washed Colombian coffee and bright citrus notes from Ethiopia Chelbesa Washed. We tasted milk chocolate, prune, sugar, and green grape, with a juicy green grape acidity and a punchy body.

Coffee: 25 g ground medium-fine

Water: 400 g at 205°F

Bloom: 50 g for 30 seconds

Pulse Pours: At 0:30 pour to 150 g, at 0:45 pour to 220 g, at 1:15 pour to 280 g, at 1:40 pour to 340 g, and at 2:00 pour to finish at 400 g

Total Brew Time: 3:15 - 3:30

Espresso Recipe

Dose: 19 g

Yield: 40 g
