A clean, sweet Yirgacheffe from MoonGoat Coffee that brings the region’s distinct character into focus while highlighting the women-owned and operated washing station behind it.

This lot comes from Tulise Washing Station, a women-owned and operated station led by third-generation coffee producer Hirut Gute, who works with roughly 500 smallholder farmers in the surrounding community.

Selected by MoonGoat for its clear expression of Yirgacheffe, the cup moves from juicy fruit and deep sweetness to citrus and florals as it cools, remaining clean and sweet throughout.

We tasted notes of ripe peach, pear, and herbs.

Grind Guidance

Start in the middle of your espresso range on your grinder, and Series 1 will tell you to go finer or coarser after your shot pulls. It is expected that you might need to adjust based on your specific variables (i.e. location, climate, water mineral content, etc.). Small adjustments go a long way!

Tips

  • Your first drops of espresso should be within 6-8 seconds. If longer, change your grind!
  • Adjust grind size if your shot pulls too fast (grind finer) or too slow (grind coarser)
  • Clean your Series 1 regularly for optimal performance

Pour Over

Ingredients:

  • Coffee: 18g
  • Water: 297g at ~93 - 94°C (200°F)

Grind Settings:

  • Ode + SSP Burrs: 6 - 7
  • Ode Gen 2 Burrs: 5 - 6
  • Opus: 6 - 7 (inner ring at 0)

Steps:

  1. Grind coffee at medium setting
  2. Rinse filter with 200°F water
  3. Bloom: Pour to 40g water, wait 30 seconds
  4. Continuous pour stages:
    • Pour to 100g, wait 15 seconds
    • Pour to 160g, wait 15 seconds
    • Pour to 220g, wait 15 seconds
    • Final Pour to 297g
  5. Target brew time: 2:15 - 3:15 minutes
