Fellow's Take on Hills of Heza by Loveless | Brew Recipe

An easy-brewing, high-altitude Burundi from Loveless Coffees with deep, lingering sweetness balanced by delicate floral and citrus aromatics.

Grown at high altitude on smaller farms amidst the dramatic landscape of the Great Rift Valley in Kayanza, Burundi, Hills of Heza showcases the earthy sweetness characteristic of coffees from the region.

As the cup cools, that sweetness deepens and contrasts beautifully with delicate floral and lightly citric aromatics. “Heza” means “Beautiful Place” in Kirundi, a fitting name for a coffee grown in this remarkable landscape.

We tasted notes of molasses, raisin, and candied citrus, reminiscent of sweetened Earl Grey tea.

Note: Hills of Heza should rest for a minimum of 2-3 weeks for filter coffee and 4 weeks for espresso.

How to Access:

  1. Turn on your Series 1 espresso machine
  2. Navigate to "Profiles" on the touchscreen
  3. Scroll down and select "Fellow Drops"
  4. Select "Loveless Hills of Heza"
  5. Follow the guided workflow to pull your shot

Series 1 Profile Parameters:

  • Dose: 18g
  • Ratio: 1:2.5
  • Temp: 201°F / 94°C
  • Declining temp: Off
  • Transition: Smooth

Preinfusion:

  • Off or On: On
  • Duration: 15 seconds
  • Pressure: 3 bars
  • Fill flow rate: 4.5 ml/s

Infusion:

  • Duration: 10 seconds
  • Pressure: 7 bars

Ramp Down:

  • Off or On: Off

Grind Guidance

Start in the middle of your espresso range on your grinder, and Series 1 will tell you to go finer or coarser after your shot pulls. It is expected that you might need to adjust based on your specific variables (i.e. location, climate, water mineral content, etc.). Small adjustments go a long way!

Tips

  • Adjust grind size if your shot pulls too fast (grind finer) or too slow (grind coarser)
  • Clean your Series 1 regularly for optimal performance

Pour Over

Stagg X / flat bottom drippers (Orea V4 narrow, classic bottom)

Ingredients:

  • Coffee: 20g
  • Water: 325g at 93.33°C (200°F)
  • Ratio: 1:16.25

Grind Settings:

 

  • Ode + SSP: 3.2 - 4.2
  • Ode Gen 2: 2.2 - 3.2
  • Ode Gen 1 Burrs: 2
  • Opus: 3.2 - 4.2 (inner ring at 0)

Steps:

  1. Grind coffee at above settings
  2. Rinse filter with 96°C water
  3. Bloom: Pour to 50g water, wait 35 seconds
  4. Continuous pour stages:
    • Pour to 150g, at 40 seconds
    • Pour to 225g, at 1:15
    • Final pour to 325g, at 2:00
  5. Target brew time: 2:30 minutes
