A decaf that doesn’t compromise on flavor, using a natural sugarcane ethyl acetate (EA) decaffeinating process that preserves the coffee's sweetness and character while delivering a flavorful experience.

This medium-roast decaf comes from a collection of smallholder producers across Huila, Colombia, where the region's diverse elevations and microclimates create exceptional complexity in the cup.

It’s decaffeinated using a natural ethyl acetate (EA) process, a naturally occurring ester found in bananas and fermented sugarcane, used as a solvent to remove caffeine from green coffee. The beauty of the EA process is that it helps preserve the coffee's original flavors while adding fruity notes and complexity to the cup.

How to Access:

  2. Navigate to "Profiles" on the touchscreen

Series 1 Profile Parameters:

  • Dose: 18g
  • Ratio: 1:2.5
  • Temp: 200°F
  • Declining temp: Off
  • Transition: Smooth

Preinfusion:

  • Off or On: On
  • Duration: 14 seconds
  • Pressure: 3 bars
  • Fill flow rate: 4.5 ml/s

Infusion 1:

  • Duration: 10 seconds
  • Pressure: 7 bars

Infusion 2:

  • Duration: 10 seconds
  • Pressure: 9 bars

Ramp Down:

  • Off or On: On
  • Duration: 10 seconds
  • End Pressure: 6 bars

Grind Guidance: Start in the middle of your espresso range on your grinder, and Series 1 will tell you to go finer or coarser after your shot pulls. It is expected that you might need to adjust based on your specific variables (i.e. location, climate, water mineral content, etc.). Small adjustments go a long way!


Espresso Recipe

  • Dose: 18g
  • Yield: 45g
  • Ratio: 1:2.5
  • Temperature: 200°F
  • Pressure: 8 bars
  • Pull time: 40 seconds

Tips:

  • Adjust grind size if your shot pulls too fast (grind finer) or too slow (grind coarser)
  • Clean your Series 1 regularly for optimal performance

Pour Over

Stagg X / flat bottom drippers

Ingredients:

  • Coffee: 15g
  • Water: 250g at 205°F

Grind Settings:

  • Ode + SSP Burrs: 6.2-7.2
  • Ode Gen 2 Burrs: 5.2-6.2
  • Ode Gen 1 Burrs: 4.2-5.2
  • Opus: 6.2-7.2 (inner ring at 0)

Steps:

  1. Grind coffee at medium to medium-coarse setting
  2. Rinse filter with 205°F water
  3. Bloom: Pour to 45g water, stir, wait 45 seconds
  4. Continuous pour stages:
    • Pour to 90g, wait 30 seconds
    • Slowly pour until final weight of 250g, swirl
  5. Target brew time: 2:30-3:00 minutes
