Our annual creepy collab with Brandywine returns! This year's Felloween installment is an anaerobic natural from Ethiopia's GERA Estate in the Djimma region. It's a hauntingly smooth cup that's packed with fruit and just the right amount of complexity. We tasted grape, mixed berries, candied sweetness, and a whisper of wine. This coffee doesn't just wake you up, it possesses you.

Brew Guide for Brandywine Felloween V

Pour Over

* Stagg X/ flat bottom drippers 

Ingredients:

  • Coffee: 22g

  • Water: 333g at 205°F

Grind Settings:

  • Ode + SSP Burrs: 5.2 - 6.2

  • Ode Gen 2 Burrs: 4.2 - 5.2

  • Ode Gen 1 Burrs: 3.2 - 4.2

  • Opus: 5 - 6 (inner ring at 0)

Steps:

  1. Grind coffee at medium to medium-coarse setting

  2. Rinse filter with 205°F water

  3. Bloom: Pour to 42g water, wait 45 seconds

  4. Continuous pour stages:

    • Pour to 142g, swirl when water is 0.5” above grounds

    • Pour to 242g

    • Final pour to 333g, swirl

  5. Target brew time: 3:00 - 3:30 minutes


Espresso

Recipe:

  • Coffee: 20g

  • Yield: 40g

  • Temperature: 200°F

  • Ratio: 1:2

  • Pressure: 9 bars

  • Pull time: 28 - 32 seconds

Note: Try a preinfusion of 10 seconds at 3 bars for this coffee if you want to experiment a bit!
