Coava sourced this coffee comes from a project that finds exceptional, traceable lots from small farmers who don’t own processing mills. Girma Sentayehu’s 6-hectare farm sits adjacent to a river and its steady supply of fresh water is ideal for producing stellar washed process coffees. We tasted elegant notes of peach, jasmine, brown butter, and a fresh cherry finish.

Pour Over

Water: 300g at 204°F
Grind Settings:

Ode + SSP Burrs: 7 - 7.2

Steps:

Grind coffee at medium-coarse setting

Rinse filter with boiling water, warming up element as much as possible (ceramic Kalita waves recommended for flat-bottom extraction)

Bloom: Pour 60g water, no stir or swirl, wait 40 seconds

First Pulse: At 40 seconds, add 90g water over 35 seconds to reach 150g total (by 1:15 minutes)

Pause for 15 seconds

Second Pulse: At 1:30 minutes, add 150g water over 45 seconds to reach 300g total (by 2:15 minutes)

Target brew time: around 2:45 - 3:15 minutes
