This week's Drop comes from Kafiex, named Roaster of the Year by Roast Magazine in 2026. A dark roast sourced from approximately 75 growers in Popayán, Cauca, Colombia, the program is built on long-term relationships, with producers receiving premiums of up to 20% above market price for higher-quality lots.

Rich and comforting, with notes of dark chocolate and toffee nut. Clean and balanced in the cup.

  • Ratio: 1:1.77 ideal, 1:1.5-1:1.2 will work well!

  • Temp: 198°F

  • Declining temp: Off

  • Transition: Smooth

Preinfusion:

Infusion:

  • Duration: 30 seconds

  • Pressure: 9 bars

Ramp Down:

  • On

  • Duration: 5 seconds

  • Pressure: 3 bars

Grind Guidance

Start in the middle of your espresso range on your grinder, and Series 1 will tell you to go finer or coarser after your shot pulls. It is expected that you might need to adjust based on your specific variables (i.e. location, climate, water mineral content, etc.). Small adjustments go a long way!

Pour Over

  • Stagg X / flat bottom drippers

Ingredients:

  • Coffee: 20g

  • Water: 320g at 196°F

Grind Settings:

  • Ode + SSP Burrs: 6.1 - 7.1

  • Ode Gen 2 Burrs: 5.2 - 6.2

  • Ode Gen 1 Burrs: 4.2 - 5.2

  • Opus: 6 - 7 (inner ring at 0)

Steps:

  1. Grind coffee at medium setting

  2. Rinse filter with 196°F water

  3. Bloom: Pour to 40g water, wait 30 seconds

  4. Continuous pour stages:

    • Pour to 120g, swirl when water is 4 inches above grounds

    • Pour to 220g

    • Pour to 280g

    • Final pour to 320g, swirl

  5. Target brew time: 3:00 - 3:15 minutes
