A summer blockbuster collaboration between Messenger Coffee and Black & White Coffee Roasters, blending two competition-grade pacamaras into one vibrant, fruit-forward cup that celebrates the fun, creativity, and nostalgia of the perfect summer double bill.

Messenger Coffee and Black & White Coffee Roasters bring together thermal-shocked washed and natural pacamara lots from husband-and-wife producers Jhonatan Gasca and Alejandra Muñoz Gasca of Finca Zarza, crafting a 50/50 blend for warm days, good vibes, and sipping something that feels like pure blockbuster joy.

The result is a bright and expressive cup with delicate cherry blossom aromatics and juicy notes of peach, mango, and pineapple.

How to Access:

  1. Turn on your Series 1 espresso machine
  2. Navigate to "Profiles" on the touchscreen
  3. Scroll down and select "Fellow Drops"
  4. Select "Messenger and Black & White, Double Feature"
  5. Follow the guided workflow to pull your shot

Series 1 Profile Parameters:

  • Dose: 18g
  • Ratio: 1:2.5
  • Temp: 200°F
  • Declining temp: Off
  • Transition: Fast

Preinfusion:

  • Off or On:  On
  • Duration: 10 seconds
  • Pressure: 3 bars
  • Fill flow rate: 4.5 ml/s

Infusion:

  • Duration: 20 seconds
  • Pressure: 9 bars

Ramp Down:

Grind Guidance

Start in the middle of your espresso range on your grinder, and Series 1 will tell you to go finer or coarser after your shot pulls. It is expected that you might need to adjust based on your specific variables (i.e. location, climate, water mineral content, etc.). Small adjustments go a long way!

Tips

  • Adjust grind size if your shot pulls too fast (grind finer) or too slow (grind coarser)
  • Clean your Series 1 regularly for optimal performance

Pour Over

Stagg X / flat bottom drippers

Ingredients:

  • Coffee: 22g
  • Water: 350g at 200°F
  • Ratio: 1:16

Grind Settings:

  • Ode + SSP Burrs: 4 - 5
  • Ode Gen 2 Burrs: 3 - 4
  • Opus: 4 - 5

Steps:

  1. Grind coffee at medium to medium-fine setting
  2. Rinse filter with 200°F water
    **If you are using Stagg EKG or another electric kettle, do not replace the kettle on the base through the brew. Let temperature naturally decline.
  3. Bloom: Pour to 60g water, wait 40 seconds
  4. Continuous pour stages:
    • Pour to 150g
    • Pour to 250g
    • Final pour to 350g, swirl 5 times
  5. Target brew time: 3:40 - 4:40 minutes
