Here's how we brewed this smooth, comforting decaf from the mountains of San Agustín, Huila, roasted in Portland by Heart.
Portland’s Heart Coffee Roasters are known for their unwavering focus on clarity, balance, and origin expression, and they roast each coffee for maximum sweetness. This lot comes from decades long partnerships with coffee growing families in southern Colombia and is gently decaffeinated using the EA process to preserve structure and flavor. In the cup, we tasted fig, milk chocolate, and soft toffee, with a rounded and satisfying finish.

Pour Over

Ingredients:

Coffee: 25g
-
Water: 425g a 212°F (or 100°C; This should be at sea level, and -1.8°F or -1°C per each ~1312 feet or 400 meter elevation)
Grind Settings:

Ode + SSP Burrs: 7.2 - 8.2

Ode Gen 2 Burrs: 6.2 - 7.2 (7.1 is optimal)

Ode Gen 1 Burrs: 5.2 - 6.2

Opus: 7 - 8.2 (inner ring at 0)
Steps:

Grind coffee at 7.1 setting

Rinse filter with 212°F [100°C] water

Bloom: Pour, while avoiding hitting the edge of the filter, to 50g water. Swirl to ensure the coffee is saturated, and wait 45 seconds

Continuous pour stages (2); slow, concentric circles:

Pour to 225g, about 1:20, pause, then start next pour before the bed dries out.

Final Pour to 425g

Swirl once again to ensure even flow on the final draw down.

Target brew time: 3:05- 3:35 minutes
