ilse is a small two-person operation in Connecticut, dedicated to roasting with depth and clarity. This lot comes from the famous Chelbesa washing station, known for their high quality, pristine coffees. We tasted apricot marmalade, melon, peach juice, sweet citrus, and black tea.

Pour Over
* Stagg X/ flat bottom drippers
Ingredients:
● Coffee: 18g
● Water: 300g at 208°F
Grind Settings:
● Ode + SSP Burrs: 4.2 - 5.2
● Ode Gen 2 Burrs: 3.2 - 4.2
● Ode Gen 1 Burrs: 2.2 - 3.2
● Opus: 4.2 - 6 (inner ring at 0)
Steps:
1. Grind coffee at 5 setting
2. Rinse filter with 208 water
3. Bloom: Pour to 100g water, wait 50 seconds
4. Continuous pour stages:
○ Pour to 200g, swirl
○ Final pour to 308g, swirl
5. Target brew time: 3 - 4 minutes

● Coffee: 18g
● Yield: 54g
● Temperature: 200°F
● Ratio: 1 - 3
● Pressure: 6.5 bars
● Pull time: 25 - 30 seconds
