Melissa Ortiz went from scoring goals as an Olympic striker to building a coffee brand that speaks to the global soccer community. Kickoff Coffee Co. is her love letter to two things that bring people together: the beautiful game and exceptional coffee like this week’s Drop.

Matchday, a light roast from small farmholders in Huila, Colombia, grown in volcanic Andean soils ideal for the cultivation of high-quality coffees. Sourced exclusively for Fellow Drops, we love that Matchday is sweet and bright, and just slightly floral.

Espresso - Series 1 Settings

How to Access:

  1. Turn on your Series 1 espresso machine

  2. Navigate to "Profiles" on the touchscreen

  3. Scroll down and select "Fellow Drops"

  4. Select "Kickoff Matchday"

  5. Follow the guided workflow to pull your shot

  6. Enjoy!

Series 1 Profile Parameters:

  • Dose: 18.4g

  • Ratio: 1:2.5

  • Temp: 201°F (94°C)

  • Declining temp: Off

  • Transition: Smooth

Preinfusion:

  • Off or On: On

  • Duration: 4 seconds

  • Pressure: 3 bars

  • Fill flow rate: 4.5 ml/s

Infusion:

  • Duration: 22 seconds

  • Pressure: 9 bars

Ramp Down:

  • Off or On: On

  • Pressure: 6 bars

  • Duration: 5 seconds

Grind Guidance

Start in the middle of your espresso range on your grinder, and Series 1 will tell you to go finer or coarser after your shot pulls. It is expected that you might need to adjust based on your specific variables (i.e. location, climate, water mineral content, etc.). Small adjustments go a long way!

Tips

  • Adjust grind size if your shot pulls too fast (grind finer) or too slow (grind coarser)

  • Clean your Series 1 regularly for optimal performance

Pour Over

Stagg X / flat bottom drippers

Ingredients:

  • Coffee: 23g

  • Water: 350g at 205°F

  • Ratio: 1:15

  • Do not return your kettle to its base after first pour; let the temperature decline during brew.

Grind Settings:

  • Ode + SSP Burrs: 4.2 - 5.1

  • Ode Gen 2 Burrs: 3.2 - 4.1

  • Opus: 5 - 6 (inner ring at 0 to start)

  • Opus 2: 4.5 - 5.5

Steps:

  1. Grind coffee at a medium setting

  2. Rinse filter with 205°F water

  3. Bloom: Pour to 50g water, wait 40 seconds

  4. Continuous pour stages:

    • Pour to 150g

    • Pour to 250g

    • Pour to 350g, swirl 5-10x to settle

  5. Target brew time: 3:30 - 4:30 minutes

  • Ode + SSP: 4.2 - 9

  • Ode Gen 2: 3.2 - 8

  • Opus: 5 - 10 (Use finer settings for 450-750ml, coarser for larger volumes)
