Fellow's Take on Mulu by Prodigal | Brew Guide

A punchy combo of washed and natural Ethiopian coffees that pairs the elegance and florality of classic washed coffees with the zippy, ripe fruit we love from naturals.

Prodigal is an ultra-premium micro-roastery based in Colorado, founded by industry heavyweights Scott Rao and Mark Benedetto. They focus exclusively on exceptionally high-scoring green coffees to craft unapologetically light, vibrant, and juicy flavor profiles. 

We tasted notes of orange, cran-apple, and cherry.

Note: Let it rest! This coffee should peak at 3 - 4 weeks off of roast.

Series 1 Settings

How to Access:

  1. Turn on your Series 1 espresso machine
  2. Navigate to "Profiles" on the touchscreen
  3. Scroll down and select "Fellow Drops"
  4. Select "Prodigal Mulu"
  5. Follow the guided workflow to pull your shot
  6. Enjoy!

Series 1 Profile Parameters:

  • Dose: 18g
  • Ratio: 1:2
  • Temp: 200°F
  • Declining temp: Off
  • Transition: Smooth

Preinfusion:

  • Off or On: On
  • Duration: 20 seconds
  • Pressure: 3 bars for 20 seconds
  • Fill flow rate: 3 mL/s

Infusion:

  • Duration: 20 seconds
  • Pressure: 9 bars

Ramp Down:

  • Off or On: On
  • Duration: 5 seconds
  • End Pressure: 6 bars

Grind Guidance

Start in the middle of your espresso range on your grinder, and Series 1 will tell you to go finer or coarser after your shot pulls. It is expected that you might need to adjust based on your specific variables (i.e. location, climate, water mineral content, etc.). Small adjustments go a long way!

Tips

  • Adjust grind size if your shot pulls too fast (grind finer) or too slow (grind coarser)
  • Clean your Series 1 regularly for optimal performance

Pour Over

Stagg X / flat bottom drippers

Ingredients:

  • Coffee: 22g
  • Water: 360-375g; bloom at 204-206°F for hand pour, and continue the brew at 210°F / ~98.5°C

Grind Settings:

  • Ode + SSP Burrs: 4.1-4.2
  • Ode Gen 2 Burrs: 3.1-3.2
  • Ode Gen 1 Burrs: 2.1-2.2
  • Opus: 4.1-5 (inner ring at 0)

Steps:

  • Bring water to a boil and insert filter into your dripper. Wet the Stagg X and filter with near-boiling water.
    • Flatten the wet filter against the wall of the brewer as much as possible
  • Set Stagg X on scale. Tare scale.
  • Put 22g ground coffee in Stagg X, then shake it side to side to level the grounds and tare scale.
  • Pour 65-70g of 204-206°F water over the grounds, being careful to spread the water evenly throughout the coffee bed. Let bloom for 45 seconds.
    • Give Stagg X a gentle swirl
  • When water level is about ~0.5in / 1cm above grounds, resume pouring.
    • Give Stagg X a gentle swirl
  • Pour ~100g for three more pours until total water weight = 360 - 375g
    • Give Stagg X a gentle swirl immediately after last pour

Aiden Brewer Settings

NOTE: For optimal bed depth, Prodigal suggests using 65-70g doses.

  • Ode Gen 2: 5 - 6
  • Opus: 5.1 - 7 (Use finer settings for 150-250ml, coarser for larger volumes)

  • Bloom: Disabled
  • Pulses: 2
  • Time between pulses: 1
  • Pulse 1 Temperature: 205°F / 96°C
  • Pulse 2 Temperature: 198°F / 92°C

  • Ode Gen 2: 6 - 10.2
  • Opus: 6.2 - 11 (Use finer settings for 450-750ml, coarser for larger volumes)
