Here's how we brewed this natural-process coffee that highlights the innovation happening beyond Honduras’ traditional reputation for washed coffee, from Santa Cruz-based Cat & Cloud.

It’s a decadent and versatile coffee that'll pull as a chocolatey, deeply fruited espresso, and brew as a structured, complex, and slightly adventurous cup of drip you'll want to keep sipping.

Cat & Cloud recommends resting this coffee for around 3 weeks before brewing it or pulling it as espresso!

Espresso - Series 1

Manually enter the dialed parameters below into a new custom profile on the Profiles menu of your Series 1 - or you can use the preset profile Light Roast  if you want to pull a shot with less fuss!

 How to Access the Profiles:

  1. Turn on your Series 1 espresso machine

  2. Navigate to “Profiles” screen using the dial

  3. Select “profiles” and either:

    1. Select “light roast” profile and “make active” OR

    2. Add custom profile with parameters below and “save”

Series 1 Profile Parameters:

  • Dose: 18g

  • Ratio: 1:2.5

  • Temp: 201°F

  • Declining temp: Off

  • Transition: Smooth

Preinfusion:

  • Off or On: On

  • Duration: 20 seconds

  • Pressure: 3 bars

  • Fill flow rate: 4.5 ml/s

Infusion:

  • Duration: 10 seconds

  • Pressure: 9 bars

Ramp Down:

  • Off or On: On

  • Duration: 3 seconds

  • End Pressure: 6 bars

Grind Guidance

Start in the middle of your espresso range on your grinder, and Series 1 will tell you to go finer or coarser after your shot pulls. It is expected that you might need to adjust based on your specific variables (i.e. location, climate, water mineral content, etc.). Small adjustments go a long way!

Tips

  • Adjust grind size if your shot pulls too fast (grind finer) or too slow (grind coarser)

  • Clean your Series 1 regularly for optimal performance

Espresso - General

Recipe:

  • Coffee: 17.8 - 18.3g in

  • Yield: 36 - 38g out

  • Temperature: 204°F

  • Ratio: 1-2

  • Pressure: 9 bars

  • Pull time: 24 - 26seconds

Single Serve

Grind Settings:

  • Ode + SSP Burrs: 5 - 6

  • Ode Gen 2 Burrs: 4 - 5 

  • Opus: 5 - 6 (Use finer settings for 150-250ml, coarser for larger volumes)

Batch Brew

Grind Settings:

  • Ode + SSP: 7 - 9.2

  • Ode Gen 2: 6 - 8.2

  • Opus: 7 - 9.2 (Use finer settings for 450-750ml, coarser for larger volumes)

Pour Over

* Stagg X/ flat bottom drippers 

Ingredients:

  • Coffee: 20g

  • Water: 330g at 206°F

Grind Settings:

  • Ode + SSP Burrs: 5 - 6

  • Ode Gen 2 Burrs: 4 - 5 

  • Ode Gen 1 Burrs: 3 - 4

  • Opus: 5 - 6 (inner ring at 0)

Steps:

  1. Grind coffee at medium setting

  2. Rinse filter with 206°F water

  3. Bloom: Pour to 60g water, wait 30 seconds

  4. Continuous pour stages:

    • Pour to 150g, wait 15 second

    • Pour to 250g, wait 15 second

    • Final Pour to 330g

  5. Target brew time: 1:35-1:45 minutes
