Fellow's Take on Spice 'n' Such by PERC | Brew Guide

Real cinnamon, cardamom, clove, and nutmeg meet the natural sweetness of a meticulously roasted bean in the coziest cup of the year.

PERC spent over a year sourcing, testing recipes, and tasting with us to build this blend from two coffees: a cardamom co-ferment from producer Diego Bermudez and a cinnamon co-ferment from Sebastian Ramirez. The result is a coffee that tastes like pumpkin pie by a crackling fire.

We tasted cinnamon, cardamom, nutmeg, and clove.

🔬 Variety: Castillo, Caturra

🔥 Roast: Medium

Note: Let it rest! This coffee should peak at 2–3 weeks off of roast.

How to Access:

  2. Navigate to "Profiles" on the touchscreen

Series 1 Profile Parameters:

  • Dose: 19g
  • Ratio: 1:2.5
  • Output: 45g
  • Target time: 35 seconds
  • Temp: 89°C / 192°F
  • Declining temp: Off
  • Transition: Smooth

Preinfusion:

  • Off or On: On
  • Duration: 10 seconds
  • Pressure: 3 bars
  • Fill flow rate: 3 mL/s

Infusion:

  • Duration: 25 seconds
  • Pressure: 8 bars

Ramp Down:

  • Off or On: Off

Grind Guidance

Opus 2: 1.2 - 1.7

Tips

  • Adjust grind size if your shot pulls too fast (grind finer) or too slow (grind coarser)
  • Clean your Series 1 regularly for optimal performance

Pour Over

Stagg [X]

Ingredients:

  • Coffee: 20g
  • Water: 300g at 95°C / 203°F (declining temp – let the kettle sit off the base)
  • Ratio: 1:15
  • Brew Time: 2:30–2:40

Grind Settings:

  • Ode + SSP Burrs: 7-8
  • Ode Gen 2 Burrs: 6–7
  • Opus: 4 - 5
  • Opus 2: 4.5 - 5.5

Grind settings are a starting point – every grinder is a little different, so use this as your baseline and adjust to taste.

Pour Technique: Use a combination of circle and slow center pours. Each pour finishes with the last 20g poured in the center.

Steps:

  1. 0:00–0:20 – Pour to 50g (last 20g in the center)
  2. 1:00 – Pour to 100g (last 20g in the center)
  3. 1:30 – Pour to 200g (last 20g in the center)
  4. 2:00 – Pour to 300g (last 20g in the center)
  5. Let the bed drain fully. Total brew time should land between 2:30 and 2:40.
