This coffee features the sweet and fruity notes you'd expect from Ethiopia's Guji region, where smallholder families farm heirloom trees above 2,250 meters.

Surprisingly complex and expressive for an everyday shot, it finishes chocolateycaramel-sweet and holds up wonderfully in milk. It comes from BlendIn Coffee Club, a Houston roaster specializing in single-origin, direct-trade coffees with full traceability.

Why we dialed it like this and other brew thoughts

Series 1 - A shorter preinfusion and no ramp down allows for a smooth and rounded shot without overextraction on this medium-roasted Ethiopia.

Pour over and Aiden - These recipes are both designed to pull out the round body and mouthfeel indicative of a true medium roast.

Grind Guidance

Start in the middle of your espresso range on your grinder, and Series 1 will tell you to go finer or coarser after your shot pulls. It is expected that you might need to adjust based on your specific variables (i.e. location, climate, water mineral content, etc.). Small adjustments go a long way!

 


 

Tips

  • Adjust grind size if your shot pulls too fast (grind finer) or too slow (grind coarser)

  • Clean your Series 1 regularly for optimal performance

 


 

Pour Over

Stagg X/ flat bottom drippers

Ingredients:

  • Coffee: 22.5g

  • Water: 350g at 205°F

Grind Settings:

  • Ode + SSP: 4-5

  • Ode Gen 2: 3-4

  • Opus: 4-5

Steps:

  1. Grind coffee at medium setting

  2. Rinse filter with 205°F water

  3. Bloom: Pour to 60g water, wait 40 seconds

  4. Continuous four-stage pour:

    • Pour to 150g, swirl

    • Pour to 250g

    • Final pour to 350g, swirl to settle

Ratio: 1:15.5

Aiden Brewer Settings
