This week’s Drop is a classic washed Ethiopian, with all the clean, light, tea-like characteristics that made a lot of us fall in love with specialty coffee in the first place. 

The coffee comes from Ethiopia's Guji Zone, where smallholder families grow heirloom trees above 2,250 meters. The warm days and cold nights ripen the cherries slowly, building sugars and concentration for a light, refreshing cup that’s the perfect start to any morning.

Why we dialed it like this and other brew thoughts

Series 1 - Pulling at a 1:2.5 ratio allows the delicate structure of this coffee to shine through. A longer preinfusion really helps it to open up!

Pour over - A 1:17 ratio with a 20.5g dose on pour over with light agitation allows to push extraction just enough to tease out the tealike qualities and structure as well as the citrus acidity and florality in this coffee.

Aiden - This profile on Aiden is designed to highlight the tealike characteristics of Haro Wachu Filter and as such may be on the lighter side for some preferences. If this is the case, feel free to push extraction by adjusting the ratio to have a higher amount of coffee to water (i.e. 1:16 instead of 1:17).

How to Access:

Series 1 Profile Parameters:

  • Dose: 18g

  • Ratio: 1:2.5

  • Temp: 200°F

  • Declining temp:  Off

  • Transition: Smooth

Preinfusion:

  • Off or On: On

  • Duration: 14 seconds

  • Pressure: 3 bars

  • Fill flow rate: 4.5 ml/s

Infusion:

  • Duration: 15 seconds

  • Pressure: 9 bars

Ramp Down:

  • Off or On: On

  • Duration: 5 seconds

  • End Pressure: 3 bars

 


 

Grind Guidance

Start in the middle of your espresso range on your grinder, and Series 1 will tell you to go finer or coarser after your shot pulls. It is expected that you might need to adjust based on your specific variables (i.e. location, climate, water mineral content, etc.). Small adjustments go a long way!

 


 

Tips

  • Adjust grind size if your shot pulls too fast (grind finer) or too slow (grind coarser)

  • Clean your Series 1 regularly for optimal performance

 


 

Pour Over

Stagg X/ flat bottom drippers

Ingredients:

  • Coffee: 20.5g

  • Water: 350g at 210°F

Grind Settings:

  • Ode + SSP: 4.1-5

  • Ode Gen 2: 3.1-4

  • Opus: 4.1-5

Steps:

  1. Grind coffee at medium setting

  2. Rinse filter with 210°F water

  3. Bloom: Pour to 60g water, wait 40 seconds

  4. Continuous four-stage pour:

    • Pour to 150g, swirl

    • Pour to 250g

    • Final pour to 350g, swirl 5-10x

Ratio: 1:17

  • Ode Gen 2: 3-4.2

  • Opus: 4-5.2 (Use finer settings for 150-250ml, coarser for larger volumes)

  • Opus: 6-10.2 (Use finer settings for 450-750ml, coarser for larger volumes)
