Fellow's Take on Proud Mary Humbler | Brew Recipe

Here's how we brewed this versatile dark roast blend by Portland’s Proud Mary Coffee.

Humbler is one of Proud Mary’s staple blends: an easy to brew crowd-pleaser that mixes deliciously with milk and makes a syrupy sweet espresso. We tasted chocolate fudge brownie, caramel, and dates.

Brew Guide for Proud Mary Humbler

Pour Over

* Stagg X/ flat bottom drippers 

Ingredients:

  • Coffee: 20 g

  • Water: 300 g at 212 F 

  • Ratio: 1:15

Grind Settings:

  • Ode + SSP Burrs: 4 - 5.2

  • Ode Gen 2 Burrs: 3.2 - 6 

  • Ode Gen 1 Burrs: 2 .2- 5

  • Opus: 4.2 - 5.2  (inner ring at 0) For Honeysuckle - 6 for Humbler

Steps:

  1. Grind Coffee at medium fine setting

  2. Rinse filter with 212 F water

  3. Bloom pour to 80 grams. Agitate back and forward side to side and wait 45 seconds

  4. Second pour: At 45 seconds poor in a zig zag motion across the slurry until you reach the total 300 gram brew weight. Swirl and let drain.
    Target brew time 3:00-3:30

Espresso

Humbler Recipe:

  • Coffee: 18g

  • Yield: 36g 

  • Temperature: 200°F

  • Ratio: 1:2

  • Pressure: 9 bars, preinfuse 5s at 3 bars

  • Pull time: 27 - 30 seconds

Honeysuckle Recipe:

  • Coffee: 18g

  • Yield: 40

  • Temperature:200 F

  • Ratio: 1:2.2

  • Pressure :9 bars, Preinfuse 5s at 3 bars.

  • Pull time: 26-29 seconds.

  • Opus: 4 - 6 (Use finer settings for 150-250ml, coarser for larger volumes)

Grind Settings:

  • Ode + SSP: 6 - 8.2

  • Ode Gen 2: 4.2 - 8

  • Opus: 6 - 10 (Use finer settings for 450-750ml, coarser for larger volumes)
