Fellow's Take on Wonderstate Peru Gesha Inka SL9 Box | Brew Recipe

Here's how we brewed three different examples of the rare Gesha Inka coffee variety, roasted by Wonderstate. beautifully packaged and highly giftable.

The coffees in this set are all the rare Gesha Inka variety, grown only at high elevations in Cusco, Peru. Related to SL9, an obscure Ethiopian variety, Gesha Inka is known for its complex flavors and exceptional quality. These are three stunning examples by three different farmers: clean, expressive, and unforgettable.

Brew Guide for Wonderstate Peru Gesha Inka SL9 Box

Note: These coffees each have a suggested rest time of two weeks, meaning they should be at their most complex and opened up around two weeks off of the roast date! Also, this Brew Guide is meant to be a starting dial for all three coffees in the set. 

Pour Over

* Stagg X/ flat bottom drippers 

Ingredients:

  • Coffee: 22g

  • Water: 375g at 205°F

Grind Settings:

  • Ode + SSP Burrs: 5 - 6

  • Ode Gen 2 Burrs: 4 - 5

  • Ode Gen 1 Burrs: 3 - 4

  • Opus: 5.1 - 6.1 (inner ring at 0)

Steps:

  1. Preheat the water and rinse the filter prior to brewing

  2. Grind 22 g coffee to medium (think table salt)

  3. Add coffee to your brewer, settle the bed, tare your scale, and start the timer.

  4. Bloom with 60 g water, pouring slowly and in a circular motion.
    a. Stir softly to ensure complete saturation.

  5. At 0:40, begin a gentle, circular pour—starting in the center and spiraling outward (don’t touch the filter)—bring the total to 150 g.

  6. At 1:10, repeat the same controlled, circular pour to reach 250 g.

  7. At 1:40, finish pouring to 375 g.

  8. Total brew time should finish between 2:45–3:20

Espresso

Recipe:

  • Coffee: 18g

  • Yield: 40g

  • Temperature: 200°F

  • Ratio: 1:2.2

  • Pressure: 6 bars

  • Pull time: 30-35 seconds

Single Serve

Grind Settings:

  • Ode + SSP Burrs: 5 - 6

  • Ode Gen 2 Burrs: 4 - 5

  • Opus: 5.1 - 6.1 (Use finer settings for 150-250ml, coarser for larger volumes)

Batch Brew

Grind Settings:

  • Ode + SSP: 6.2 - 9

  • Ode Gen 2: 5.2 - 8

  • Opus: 6.2 - 9 (Use finer settings for 450-750ml, coarser for larger volumes)

Methodology for brewing these three coffees:

  • The Aiden brew profile is a starting point for all three coffees in the set

  • Pulses replicate kettle pours, encouraging even extraction.

  • Temperature drop mimics manual brewing, opening a wider aromatic range.

  • Bloom at 1:3 fully saturates grounds before pulses begin.

Notes:

  • Cleaning: Rinse carafe & brew chamber after every use to prevent oil buildup.

  • Extraction: Adjust the brew ratio (up to 1:17, down to 1:16) to tune your desired brew strength.

  • Grind: Sizing can also be adjusted to reach ideal flavor. Coarser = weaker, Finer = stronger.
